Apple Cinnamon Ghost Pies- Welcome September!

Oh ya’ll, I may be the most inspired in September! Iv said it time and time again, but waking up this morning, out the door for a short bike ride at 5:30 Am ( with a light sweater!!!) had me so energized!

For ‘Schooling’ today, the girls and I did a little Halloween decor prep- We cleaned up the porch, pulled out our Autumn Box of odds and ends, planned out some crafts and costumes, listened to music while planting more rosemary and thyme out back, and made these cute little Hand Pies!

Sooooo easy, all I did was actually work the dough and cook the filling… the girls did all of the ingredients and assembly!

For Dough:

3 Cups Flour

1 Cup Vegan Stick Butter- cold/cubed

Ice water

1/4 C sugar

pinch of salt

Add dry ingredients to a big bowl, slowly cut in pieces of butter and ice water and knead into a dough- place in fridge to stay cold while you make the filling

Filling:

4-5 apples, peeled and cubed

1/4 Brown Sugar

1/4 Cup Butter

Lots of Cinnanon

Squeeze of lemon

tbsp corn starch

Heat up in sauce pan for about 15 mins to incorporate-

Roll out dough onto parchment… trace a hand drawn cut out of ghost with butter knife ( i let the girls to all of it- they were so proud to make these!) layer and press edges-

If you are NOT vegan, use egg wash for top- But we are- so we used a mix of maple syrup and soy milk.

Bake till golden!
